Heavenly Pineapple Mold

3 oz. pkg. lemon jello in 1 c. boiling water
add 3/4 cup pineapple juice and 1 Tbsp. lemon juice. Chill til slightly thick. Fold in 1 1/4 cups drained crushed pineapple, 1 cup shredded Cracker-Barrell brand sharp cheddar and 1 cup heavy cream, whipped. Pour into 1 1/2 qt. mold. Chill til firm. Unmold.

Peggy's Salad

1 pkg. lemon jello
1 pkg. strawberry jello
1 cup boiling water
2 cups cold water---Let set.
1 cup miniature marshmallows
3 mashed bananas
1 can pineapple, drained
Topping:
juice from pineapple, 1/4 cup sugar, and 3 Tbsp. corn starch, boil. Set and cool. Whip 1 cup Dream Whip, stir into custard. Put on top of salad.

Orange-Pineapple Salad

1 small can crushed pineapple, drained
1 box orange jello
1 cup grated cheddar cheese
1 pkg. Dream Whip
Put pineapple in a pan with 1/2 sugar. Bring to a boil. Strain juice off of pineapple. Add enough boiling water to make 1 cup juice. Mix with jello. Add 1 cup cold water to jello. Put in pineapple. Let set until creamy. Add grated cheddar cheese and dream whip fixed according to directions. Mix all together and pour into mold.

This is another of my sister Rita's recipes. It is so good.

Zesty Summer Pasta Salad

I just got busy during Christmas and haven't posted a new recipe for a week. Will try to do better now. Hope you all had a great Christmas and will have a very Happy New Year.

16 oz. cheese filled tortellini
1 chopped green bell pepper
1 chopped red bell pepper
1 small red onion, chopped
1/2 cup crumbled feta cheese
1/4 cup olive oil
1/4 cup lemon juice
2 Tbsp. chopped walnuts
Kalamata olives (pitted, as needed)
1. Make the pasta and let it cool.
2. Use a whisk to blend together the olive oil, lemon juice and walnuts, then chill it in the refrigerator.
3. Add all ingredients together in a bowl and stir. You can make it a meal by adding chicken breast cubes or shrimp.

Carrot Ambrosia Salad

7 cups shredded carrots
1 cup coconut
1 cup raisins
1/4 lb. miniature marshmallows
2 cups pineapple tidbits or chunks
1 cup sour cream
1 cup mayonaise
1 cup whipped cream
Mix fruits together. Mix creams together and add to fruits and stir.

Pistachio Pineapple Delight

2 pkgs. Pistachio flavor instant pudding
2 cans (20 oz. each) crushed pineapple in juice, undrained
2 cups miniature marshmallows
1 cup chopped pecans
3 cups thawed Cool Whip topping
Mix dry pudding mix, pineapple, marshmallows and pecan in large bowl until well blended. Gently stir in whipped topping; cover.
Refrigerate 1 hour or until ready to serve. Garnish with additional Cool Whip and chopped pecans, if desired.

Cranberry Salad

This is a recipe my Mom always used when I was a little girl. I just loved it.

1/2 lb. cranberries
1/2 cup water
1/2 cup sugar.
Cook together until cranberries pop.
Push through a sieve
1 pkg. lemon jello dissolved in 1 cup boiling water
1 cup 7-Up
1 cup diced celery
1 cup diced apples
1 cup nuts

Strawberry Salad

Drain No. 2 can crushed pineapple. Use this juice and add enough water to make 2 cups. Heat. Dissolve 2 small pkgs. strawberry jello. Stir in 2 pkgs. 10 oz. frozen strawberries (thawed slightly). Add 3 mashed bananas and the pineapple. Place half of mixture in bowl. Set in refrigerator for about 30 min. Keep remaining half at room temperature. When first half is set, spread carton of sour cream on top. Pour rest of jello on top. Return to refrigerator.

Judy's Salad

This is a recipe given to me my my niece, Judy Clark. It is a wonderful summer salad when we can get the great garden vegetables.

1/4 cup cider vinegar
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. dill weed
1/4 tsp. pepper
2 Tbsp. vegetable oil
2 sliced cucumbers
1 cup sliced red onions, separated into rings
2 ripe tomatoes, cut into wedges

In a large bowl, stir together all ingredients. Then add cucumbers, onions, and tomatoes. Toss to coat. Let stand 15 minutes before serving.

Corn Salad

This is a recipe that was given to me by my paternal grandmother, Nina Edna Garner Doubt. She was born in 1885 and was a wonderful grandmother. She even attended college which is remarkable given the era in which she was born. She was a teacher in every sense of the word. Corn Salad is excellent served with hamburgers or any kind of grilled meat.

1 can whole grain corn
1 can chopped kraut
1 cup sugar
1/2 green pepper, chopped
1/2 cup chopped onion
small jar of chopped pimentos
Put all ingredients in bowl. Stir and let set at least 24 hours in refrigerator before serving. Will keep for several days in refrigerator.

Slaw

1 large head of cabbage
Shred and mix with
red onions, cut up
Pour 1 cup sugar over it and set aside.
Boil together:
1 tsp. dry mustard
1 tsp. celery seed
1 tsp. salt
1 cup vinegar
1/2 cup salad oil
While still hot, pour over cabbage and let stand 4 to 6 hours. Do not stir until serving time. Do not store in metal container. Refrigerate. Will keep for long time. It goes well with food for a cook-out.

Raspberry Salad

This recipe is one that I got from my sister, Rita Clark. She was killed by a hit and run driver on Nov. 20, 2003. I miss her terribly. She was a wonderful sister and we were very close. As I tell my mom when we talk about Rita, we don't dwell on the day she died, but we remember the 56 years we had her and all of the joy she brought us.


1 3 oz. package raspberry jello
1/4 cup sugar
1 cup crushed pineapple(drained)
Put all in pan and bring to boil, stirring constantly. Cool. Add 1 cup whipping cream (whipped) and a small carton of cottage cheese. Pour into a jello mold or can just be put into a bowl. This is a fantastic tasting salad and is one of my son Mark's favorites. We usually had this salad at Thanksgiving or Christmas.
