1 pkg. yeast dissolved in 1/4 cup warm water
3/4 cup scalded milk
Add 1/2 cup margarine to hot milk and let cool.
1 1/2 tsp. salt
1/2 cup white sugar
3 well beaten eggs
4 cups flour
Mix all together really well and set overnight to rise. Following morning roll dough in oblong shape. Spread with 2 Tbsp. soft butter and sprinkle with 1/2 cup sugar mixed with 2 tsp. cinnamon. Roll up lightly. Cut into 1 inch slices. Place in large pan a little apart and let rise again. In bottom of pan where you put the rolls, first put in these ingredients:
1/2 cup melted butter or margarine
1/2 cup brown sugar
1/2 cup pecan halves
3 Tbsp. water
After rolls have risen, bake in 350 degree oven for 20 minutes or until done. Immediately turn upside down on a large tray. Let pan stay over rolls a few minutes so topping can run down over them.

Slaw
1 large head of cabbage
Shred and mix with
red onions, cut up
Pour 1 cup sugar over it and set aside.
Boil together:
1 tsp. dry mustard
1 tsp. celery seed
1 tsp. salt
1 cup vinegar
1/2 cup salad oil
While still hot, pour over cabbage and let stand 4 to 6 hours. Do not stir until serving time. Do not store in metal container. Refrigerate. Will keep for long time. It goes well with food for a cook-out.

You can tell that this is a really old recipe by the name. It's one that all 5 of my grandchildren love.

No Bake Butterscotch Bars
1 cup sugar

2 cups miniature marshmallows
1 cup coconut
1/2 cup pecans
1/2 cup peanut butter
1 pkg. butterscotch chips
Cook sugar,eggs, and margarine over low heat, stirring constantly for about 5 min. Cool, then add graham cracker crumbs, marshmallows, coconut, and nuts, Put mixture in a lightly greased 9 x 13 pan. Melt peanut butter and butterscotch chips, then spread over top for frosting. In warm weather, refrigerate.

1 3-1/2 lb chicken, cut-up
2 teaspoons liquid smoke
1 1 lb can tomatoes, undrained
1 green pepper, chopped
1 medium onion, chopped
1 cup chopped celery
1 Tbsp. chopped parsley
1 clove garlic, minced
1 teaspoon celery salt
pepper
1 Tbsp. cornstarch
Remove skin from chicken pieces, place in a skillet and sprinkle with smoke. Allow to marinade while preparing the vegetables. Cut tomatoes into bite-sized pieces and pour over chicken. Add all remaining ingredients except cornstarch and bring to a boil. Reduce heat and simmer 45 minutes or until chicken is tender. Remove chicken and return heat to high under skillet. Combine cornstarch with 1 Tbsp. water and stir into tomato mixture. Boil 1 minute, stirring. Serve chicken with thickened sauce over cooked rice.

1 (12 oz. ) pkg. semisweet chocolate morsels
1 cup chopped pecans
Prepare brownie mix according to package directions; stir in sour cream, chocolate morsels, and pecans. Spoon into a greased 13 x 9 in. pan. Bake at 350 degrees for 30 to 35 minutes or until done. Cool and cut into squares. Yield: 2 dozen

Maxine's Oatmeal Cookies
These are my husband's favorite cookies.
1 Cup shortening
1 cup white sugar
1 cup brown sugar ( firmly packed )
Cream together
Add 2 eggs
Cream again
Add 1 1/2 cups flour
1 tsp. soda
1/2 tsp. salt
1 tsp. vanilla
Mix then add 3 cups quick cooking oats. Mix again.
Bake at 350 degrees for 8 - 10 minutes.
Sometimes when we go on a trip, I will make these and add raisins, pecans, chocolate chips and coconut. George calls them his gourmet traveling cookies.

Green Enchiladas
This is a recipe given to me by my good friend, Ruth. It is delicious.
1 can cream of chicken soup
1 can evaporated milk
1/2 lb. Velveeta cheese
1 small can chopped green chilies
1 small can pimentos, chopped
1 lb. ground beef- lightly browned
1/2 lb. long horn cheese
1 cup chopped onion
1 dozen tortillas
Heat soup, milk, and velveeta cheese in top double boiler until cheese is melted. Add chilies and pimentos. After meat and onion are browned, add longhorn cheese. Fill each tortilla with meat mixture, and roll tightly . Place in baking dish. Pour cheese sauce over. Cover with foil and bake at 350 degrees for 30 minutes.

Creamy Potato Soup
For you, Andrea. I love it that you requested a recipe. This is the best potato soup I have ever eaten. My mom gave me the recipe a long time ago. I am as sure as I can be that it is not very good for our arteries, so we don't eat it very often. It is wonderful on a cold, winter night.
8-10 medium potatoes, diced 3/4 in square
1 cup chopped onion
1 Tbsp. salt
1 tsp. black pepper
2 pkgs. Weight Watcher's Chicken Broth and Seasoning (I have used 2 chicken broth cubes)
3 cups coffee creamer
1 gallon water
1 cup flour
1 stick melted margarine
Add all ingredients except creamer, flour and margarine into water and bring to a boil. Mix flour, creamer, and enough water to make thin paste. When potatoes are done, slowly pour in flour, creamer mixture, stirring constantly. Add margarine. Enjoy!! This makes a huge pot. You would probably need to invite lots of friends or cut the recipe down.

1 quart buttermilk
You may make a few of these at a time each day or you can make a whole lot. Mixture will keep up to 6 weeks in container in refrigerator. Makes a wonderful breakfast . Bake at 350 degrees until done.

Tomato-Basil Pasta Sauce
This is a recipe that my daughter, Becky, created a few years ago. I just talked to her on skype a few minutes ago and she said I could use this on my blog today. Hope you enjoy it.
1 can cheese soup
3/4 cup milk
1 can diced tomatoes (drained)
1/4 c. parmesan cheese
1 Tbsp. basil
few drops of Tabasco
3 cups hot cooked pasta (about 6 oz. dry)
1. in 2 qt. pan, stir soup, milk, tomatoes, cheese and basil. Over med. heat, cook to boiling. Reduce heat to low; cook 5 min.
2. Pour over pasta; toss gently to coat.

German Chocolate Layer Cake
Mix German Chocolate cake mix as directed on pkg.
Blend 2 8oz. cream cheese
4 eggs
1 Cup sugar
Spread 1/2 of cake mix in 9 x 13 cake pan
Spread on cream cheese mixture, then top with remaining cake mix.
Bake for 1 1/4 hrs. in 350 degree oven
Frost with german chocolate frosting mix

Old Fashioned Rolled Dumplings
Use this with boiled chicken.
2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt
Enough broth from boiled chicken to make a stiff dough as for biscuits. Roll them on floured surface and cut in strips about 1/2 in. wide and 1 1/2 in. long. Drop into the boiling broth and cook slowly for 15 to 20 min., covered. Do not stir too much. Black pepper to taste. This is not a light, fluffy dumpling, but more of a soft chewy dumpling. Very good!

Old Settler's Baked Beans
Today was the birthday of my mother-in-law, Minnie. She passed away in 1993. She was a wonderful Christian lady. I loved her and she loved me. It would be a much better world if there were more people like her. She became a widow when she was less than 40 years old, and still had 3 children at home to raise. She did laundry and ironing for people to make money to take care of her children. She never missed church unless she was very ill. She really had a pretty hard life, but loved the Lord with all her heart and had such a sweet spirit. WE miss her. This recipe is one she gave to me many years ago. It is fantastic.
Brown 1/2 lb. bacon, chopped
Remove bacon, and brown 1 lb. hamburger and 1 onion (chopped)
Mix 1/3 cup brown sugar
1/3 cup white sugar
1/4 cup catsup
1/2 tsp. chili powder
1/4 cup barbecue sauce
2 Tbsp. mustard
1 tsp. salt
2 Tbsp. molasses
1 /2 tsp. pepper
Add to the hamburger mixture, mix well.
Then add:
1--15 oz. can kidney beans
1--15 oz. can butter beans
1-- 15 oz. can pork and beans
Drain all beans except the pork and beans.
Bake 350 degrees for 1 hour covered.
Add bacon before serving. Can also put in crock pot and let simmer for 1 1/2 to 2 hours.

Here is another one of my sister, Rita's recipes. We traded recipes all of the time as we both really loved to cook. With it getting the time of year to have cookouts, I thought someone might enjoy this recipe.
2 cans of jalapeno bean dip
1 carton sour cream
1 pkg. taco seasoning
3 avocados
3 tomatoes
2 bunches of green onions
2 small cans chopped black olives
1 10oz. pkg mild cheddar cheese, grated
Spread bean dip on large platter.
Mix taco seasoning in sour cream and spread on top of bean dip.
Chop avocados , add salt and pepper and lemon juice.Sprerad on as next layer.
Layer next in order:
chopped onions
chopped olives
chopped tomatoes
cheese over top of all
Cover lightly with plastic wrap. Refrigerate until time for serving.

Today, my recipe is in honor of my sweet daughter-in-law, Cindy. When I ask her what kind of cake she wants for her birthday, she usually tells me either Red Velvet or Carrot.
1/2 cup Crisco
1 1/2 cups sugar
2 eggs
2 cups sifted flour
1 Tbsp. cocoa
1/2 tsp. salt
1 cup buttermilk
1 tsp. vanilla
2 oz. red cake color ( Since food color is expensive, I usually use a 1 oz. bottle and then fill the bottle with water and add that, also. Works just fine.)
1 Tbsp. vinegar

Cream shortening, eggs, and sugar thoroughly. Add Dry ingredients. Mix well, alternating with the liquids. Mix vinegar and soda together, stir then add to cake batter. Pour into 2 greased and floured round cake pans. Bake for 20 - 25 minutes in 350 degree oven. Cool thoroughly before frosting.

Put flour in small pan. Add just a little bit of milk at a time stirring constantly. Otherwise you will get paste.
Then cook over low heat until it is thickened, then let cool.

$5,000 Casserole

1 tsp. salt

1 7 oz. pkg. macaroni (cooked according to pkg. directions, and drained)
Put all in greased casserole dish and bake 35 min. in 350 degree oven.

1/2 cup strawberries (slightly chopped)

1/2 box or 1/2 lb. powdered sugar
1/2 stick butter or margarine
1/4 cup strawberries (slightly chopped)

Strawberry Shortcake
Today I will pay honor to my Mom. She was a wonderful cook and I grew up eating this fantastic Strawberry Shortcake. As a girl, her mom always made shortcake with pie crust crumbled in a bowl with strawberries over it. But my Dad liked sweetened biscuit dough shortcake so she always made this for him and for my brother, sister, and me. Of course, growing up on a farm, we picked our own strawberries, and had fresh cream from the cow to put on it. Yum! Yum! There is no wonder I have always had a weight problem!!!! My Mom is still alive and lives in a nursing home. She has dementia but it is not so bad that she can not remember all of the fun we used to have on the farm. We spend lots of time reminiscing. She is a wonderful Mom and is always smiling and happy. I thank God for her.
2 cups flour
4 tsp. baking powder
1 tsp. salt
1/3 cup sugar
Heaping soup spoon of shortening (probably about 1/4 cup)
Take fork and stir around until somewhat blended
About 1 cup milk
Blend all together
Into a greased 9 x9 pan, put about 1/2 of the dough. Using fingers dipped in flour, gently pat out the dough to edges of pan. Cover lightly with melted margarine. Repeat process with rest of dough finishing with melted margarine on top. Bake in 400 degree oven for 15 to 20 min. or until lightly browned and cooked through. Have strawberries hulled and sliced and sugared in refrigerator. When shortcake is done, cut a piece, split where it is buttered and put in bowl. On 1/2 in bowl, put strawberries on, then cover with second 1/2 and more strawberries. This is when we would use the cream, but you can also use half and half. That is what we use n ow. Enjoy!!!!!!!!!

Fresh Strawberry Pie
This is the time of the year to think about fresh strawberries. So for the next couple of days or so I will print recipes that use strawberries. I can't help but think of the year that we moved here. It was 1972 and Mark was 3 years old. Our neighbor had a strawberry patch and she would let me pick there for 25 cents per quart. They were wonderful, such flavor. The California berries that you can get in the grocery are o.k. but if you can get Missouri or Arkansas grown berries, they have so much more flavor.
1 cup sugar
heaping TBSP. of cornstarch
Mix together
Then add :
1 cup water
Bring to a boil.
Add 1/2 pkg. of Wild Strawberry jello (must be Wild Strawberry to get the right flavor)
Stir well.
Cool, then pour over 1 qt. of sliced strawberries in baked pie crust. Refrigerate. Makes 1 pie.
It is absolutely delicious. You may put cool whip or ice cream on top for serving.

Italian Cream Cake
Today's recipe is in honor of my daughter, Becky Liles, Missionary to Italy. Italian Cream Cake is one of her favorites. For those of you that have been praying for Becky and family, they have arrived safely, luggage and all. Thanks for your prayers.
1 Cup buttermilk
1 tsp. soda
5 eggs, separated
2 cups sugar
1 stick margarine
1/2 cup Crisco
2 cups sifted flour
1/2 tsp. salt
1 tsp. vanilla
1 cup coconut
1 cup pecans
Combine soda and buttermilk. Let stand. Beat egg whites til stiff. Cream sugar, margarine, and Crisco. Add 1 egg yolk at a time beating after each. Add flour and buttermilk alternately. Add vanilla. Fold in egg whites. Gently stir in coconut and nuts. Bake in 325 degree oven for 25 min. Makes 3 large layers.
Cream Cheese Frosting:
8 oz. cream cheese
1 stick margarine
1 tsp. vanilla
Enough powdered sugar to make it stiff enough to frost. Beat til smooth.

Chicken Tetrazini
WE are heading to the airport in the next few minutes to say good bye to the Liles Family. Please pray for ALL of us.
Boil 4 chicken breast.
Skin and debone.
Boil spagetti noodles-Drain.
1 jar of pimentoes-Drain
2 cans of mushroom soup-undiluted
1 Diced onion
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic salt
1/2 tsp. seasoned salt
Pour all into greased casserole dish. Cover with shredded cheese. Cover with foil. Bake in 325 degree oven for about 1 hour. This is a recipe from my mom. Very good!

Mazetti
12 oz. pkg. of wide egg noodles

1 cup chopped onion
3/4 cup minced celery
1 med. green pepper, minced
2 1/2 tsp. salt
1/4 tsp. pepper
2 10 3/4 oz. cans condensed tomato soup
1/4 cup margarine
1/4 cup grated parmesan cheese
Prepare noodles as label directs. Drain.
Cook ground beef, onion, celery, green pepper, salt and pepper until meat is browned, about 10 min. Spoon off fat. Stir in undiluted soup. Place hot noodles in 3 qt. casserole, toss with margarine until melted. Stir in meat mixture until well mixed. Sprinkle top with parmesan cheese. Bake in 350 degree oven for 45 min. Makes 12 servings.

Barbeque Meatballs
A little bird told me that Rachel would like for me to post this recipe. It was given to me by my mom many years ago.
1 12oz. can evaporated milk
3 lbs. ground beef
2 cups oats
2 eggs, slightly beaten
1 cup onions, chopped
1/2 tsp. garlic powder
2 tsp. salt
1/2 tsp. pepper
2 TBS. chili powder
Sauce
2 cups catsup
1 1/2 cups brown sugar
2 TBS. liquid smoke
Mix together all meat ingredients and shape into balls. Place in one layer on foil lined cookie sheet. Mix all sauce ingredients. Spoon sauce over meatballs. Bake at 325 degrees for 45 minutes. Makes approximately 40 meatballs. They freeze well after baking if needed.

I have had this recipe for more than 50 years. It is a different kind of chocolate chip cookie. It is Becky's favorite.
1 cup shortening
2 eggs
3/4 cup brown sugar
3/4 cup white sugar
1/2 tsp. soda
3/4 tsp. salt
2 3/4 cups flour
1 tsp. vanilla
12 oz. pkg. semi-sweet chocolate chips
Cream together shortening, and sugars. Add rest of ingredients. Roll into walnut sized balls. Bake at 400 degrees for 7 min. Will be only slightly brown. These are a soft cookie.

Raspberry Salad
This recipe is one that I got from my sister, Rita Clark. She was killed by a hit and run driver on Nov. 20, 2003. I miss her terribly. She was a wonderful sister and we were very close. As I tell my mom when we talk about Rita, we don't dwell on the day she died, but we remember the 56 years we had her and all of the joy she brought us.
1 3 oz. package raspberry jello
1/4 cup sugar
1 cup crushed pineapple(drained)
Put all in pan and bring to boil, stirring constantly. Cool. Add 1 cup whipping cream (whipped) and a small carton of cottage cheese. Pour into a jello mold or can just be put into a bowl. This is a fantastic tasting salad and is one of my son Mark's favorites. We usually had this salad at Thanksgiving or Christmas.

4 egg whites, beat til fluffy and set aside.
1/2 cup unsweetened applesauce
1/2 buttermilk
Juice from 11 oz. can of mandarin oranges
1 box of Lemon cake mix
Blend 2 min. Fold in whipped egg whites
Pour into 9x13 cake pan sprayed with Pam
Sprinkle mandarin oranges over top of batter.
Bake 30 to 35 min. in a 350 degree oven. Cool.
Topping:
8 oz. can crushed pineapple and juice
1 small box of instant vanilla pudding
Blend together
Add 1- 8 oz. container vanilla yogurt
1 1/2 cups lite Cool Whip
Gently fold and place on top of cake. Refrigerate.

My grandkids really like these.
1 cup quick cooking oats
1 cup buttermilk
1 cup sifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/3 cup margarine
1/2 cup brown sugar
1 egg
Combine oats and buttermilk in small bowl. Mix well and let stand 1 hour. Sift together flour, baking powder, baking soda and salt; set aside.
Cream together margarine and brown sugar in mixing bowl, using electric mixer at medium speed. Add egg; beat until light and fluffy.
Add dry ingredients alternately with oat mixture to creamed mixture, blending well after each addition. Spoon batter into greased muffin-pan, filling 2/3 full. Bake in 400 degree oven 20 min. or until golden brown. Serve warm. Makes 12 to 16 depending on how full you fill muffin tins. I use this recipe when I need a quick bread for dinner. It is another way to get children to eat their whole grains.
