Green Enchiladas

This is a recipe given to me by my good friend, Ruth. It is delicious.

1 can cream of chicken soup
1 can evaporated milk
1/2 lb. Velveeta cheese
1 small can chopped green chilies
1 small can pimentos, chopped
1 lb. ground beef- lightly browned
1/2 lb. long horn cheese
1 cup chopped onion
1 dozen tortillas

Heat soup, milk, and velveeta cheese in top double boiler until cheese is melted. Add chilies and pimentos. After meat and onion are browned, add longhorn cheese. Fill each tortilla with meat mixture, and roll tightly . Place in baking dish. Pour cheese sauce over. Cover with foil and bake at 350 degrees for 30 minutes.

Jenny made this last night. It was he best cheese sauce I have ever had. I would have been happy with just the sauce and two big bags of corn chips.

Really, these are so good! Restaurant quality! You should open one and serve these and Hillen-tacos!
