1 3-1/2 lb chicken, cut-up
2 teaspoons liquid smoke
1 1 lb can tomatoes, undrained
1 green pepper, chopped
1 medium onion, chopped
1 cup chopped celery
1 Tbsp. chopped parsley
1 clove garlic, minced
1 teaspoon celery salt
pepper
1 Tbsp. cornstarch
Remove skin from chicken pieces, place in a skillet and sprinkle with smoke. Allow to marinade while preparing the vegetables. Cut tomatoes into bite-sized pieces and pour over chicken. Add all remaining ingredients except cornstarch and bring to a boil. Reduce heat and simmer 45 minutes or until chicken is tender. Remove chicken and return heat to high under skillet. Combine cornstarch with 1 Tbsp. water and stir into tomato mixture. Boil 1 minute, stirring. Serve chicken with thickened sauce over cooked rice.

I have a recipe called Chicken Delight, too, but it's totally different...
This one sounds good, I may just have to have a "Delight" cookoff...
I made your raspberry salad and raisin bran muffins yesterday. Both were wonderful!
